“We have been doing it for nine years with the main headquarters in Mexico City, it is a totally different event, there it is more corporate so that more brands are known and some others continue to position themselves; here we wanted something more social, more familiar, that had a magical environment of the place: San Miguel de Allende has all the charm, customers go from one place to another, from one dinner to another with the various chefs, so the first edition It is a very different concept”, the director highlighted in an interview.

“It is also close, it is a very good gastronomic attraction, not only because of the wineries but also because of the number of chefs of national and international renown, with a mix of chefs with completely different styles, with many types of cuisine, also the levels of trajectory, because many are recognized but also get together with new stars that somehow make themselves known in this type of event, national and international wine brands and we present the best distillates, so we try to have a mix ” Manuel added.

During the closing day, the Mexican chef Achilles Chavez offered a flute of green sauce with holy leaf and barbecue, placeras pork rind toast with salt-cured nopales and guacamole, as well as some Esquites with six types of native corn.

“For me it is very important to show Hidalgo that is where I have my Sotero restaurant, the priority is to show the local ingredient, in addition to the fact that everyone knows nopales, guacamole, and Esquites, but to do it differently is to give it a twist,” said Aquiles.

For him it is important to highlight the culture and food of our country, because in addition to the fact that there is a wide variety of dishes wherever you go, it is also a tourist attraction for visitors and foreigners.

“As a Mexican chef who was trained in Mexico, highlighting the national cuisine is ideal, it is what I like the most, making it known not only in our country, but also abroad. Try what is done in Mexico because it is very wide, in addition to showing the wealth, the streets, the food is different depending on the region you go toif you go to Yucatan you are not going to eat the same as in Mérida, in the Bajío or in the south”, he stressed.
