To start you will need boiling water, honey (raw honey is best if you have it) and a large bunch of thyme, preferably organic and/or from the garden. Put the thyme in boiling water and let it steep until the water is completely cold. It takes about 20 minutes. Remove the thyme from the water. Whisk organic raw honey into water.

Strain the syrup into a clean jar and refrigerate for up to 2 months, which should keep you ready to go for the cold season. Always store the syrup in the refrigerator.
