Every evening, Jean Prat joins his animals there. The breeder knows the temperament of each of his animals. For him it is a heartbreak to have to part with it. “The Aubrac cow ages well up to 20 years, it is quite exceptional. At the production level, they are kept up to 10-12 years to enhance the animal. Then we try to sell them, for reproduction at another breeder“explains Jean Prat.

Aubrac is a land of contrasts. On this vast plateau, water, stone, the wind sculpt large spaces. To know this region, nothing like hiking on the paths of Santiago de Compostela. Trails that Gonzalo Dias has been taking for over 30 years. The hiker likes to say that he looks like this land strewn with granite. “A landscape like Aubrac, that necessarily builds character. It was a difficult region to live in for a long time. The locals made do with it, and that forged characters perhaps a little taciturn, but over time we manage to create real links“he explains.
