A few bubbles in good company, with my companion and the owners of Gindreau, Sandrine and Pascal Bardet, whom I thank for their trust.
It’s a recognition that flatters your precociousness. For you, is this a legitimization of your choice of loyalty to Gindreau or an invitation to the movement?
I am loyal to my region, and on the eve of my 30th birthday, I do not see my life anywhere other than in the South-West. On the one hand for my family, on the other, for its landscapes, its gastronomy and of course, its wines. I have been at Gindreau for over six years. My balance is in Saint-Médard, with Sandrine and Pascal Bardet.
What can we dream of when we experience such consecration at such a young age?
The same story as before the Chef Magazine prize, of a simple life. I have the chance to do what I love, and I intend to continue in sommellerie, with who knows, new challenges!
Wines from the South-West are sometimes overshadowed by their big neighbor Bordeaux. What do you think is the secret to the charm of your region’s wines?
South-West wines have their own identity. They advocate diversity: that of climate, terroirs and appellations. It is this diversity that allows us to enhance the richness of the dishes of our region.
