On a morning walk in Ebensee, my children and I passed a fish-smoking hut where the owner was removing a few coals from the smoke. He was kind enough to wrap two hot fishes in newspaper for us. We had the first one for lunch. The next night I used the second one to make a smoked fish carbonara.
