Composition
Wash the potatoes well, peel them and cut them into pieces. Soak them in water for 10 minutes. Now put them in a pot with water and salt. Boil for regarding 5-6 minutes.
Add refined flour and water along with red chili powder, oregano, and salt in a bowl and make a paste. The paste should neither be too thick nor too thin.
Add potato chunks to a bowl and coat them well in this mixture.
Now heat 1 cup of oil in a pan. Put the wedges in hot oil and fry. Fry until golden brown. Remove the fried pieces to a plate.
Heat 2 tbsp oil in a pan. Add chopped garlic, chopped ginger and cook for a minute. Now add chopped coriander leaves and fried potatoes to it. Add a pinch of red chili powder and mix well. Cook for just one to two minutes.
