Agave syrup is extracted from the agave plant, a succulent plant native to Mexico. It is considered a vegan alternative to honey because of its syrupy texture and natural sweetness.

With its neutral taste and its strong sweetening power, it is necessary to use less than classic sugar. In fact, 50 g of agave syrup is equivalent to 150 grams of sugar. If it is so high in calories, you need less to be as sweet.

Another advantage is its low glycemic index (around 15). This allows, as with coconut sugar, not to cause a glycemic peak.

Agave syrup is also interesting because of its nutritional composition, much better than refined white sugar. It contains vitamins but also calcium, magnesium, iron and potassium. Rich in carbohydrates, its consumption must still remain reasonable, as with white sugar.
