Emulsifiers are used liberally in ultra-processed products, in order to preserve the texture of the food, but also to improve its taste or appearance. They are found in particular (among the many examples that we could cite) in bread, chocolate, or ice cream. Research has already established a link between the consumption of emulsifiers and an increased risk of developing health problems such as obesity (Obesity is the state of a person, or an animal, suffering from hypertrophy of…) or inflammation (Inflammation is a stereotypical immune defense reaction of… ) intestinal. A study conducted by the IDIBAPS Institute in Barcelona (Barcelona (Barcelona in Catalan and Castilian) is a municipality in Catalonia – Spain, located…) and recently published in the journal PLOS Biology, reveals that the consumption of such ingredients could present an impact on the development of neural circuits in the baby’s hypothalamus. In addition, other disorders have been identified, whether metabolic, psychological or cognitive.

Tests carried out on mice illustrate this danger. The researchers actually found that when emulsifiers were incorporated into the diet of mice, effects were seen in their offspring. Specifically, they provided (Les Foúrnoi Korséon (Greek: Φούρνοι…) to rodents water containing two types of emulsifiers commonly used in human food: polysorbate-80 and carboxymethylcellulose. The mice were thus watered before pregnancy (Pregnancy is the physiological process during which the living offspring of a woman…), and until suckling (Suckling is the action of female mammals feeding their offspring.. The proportions administered were limited to the maximum concentration authorized in human food products by the UN, namely here: 1% of each of these two emulsifiers.In comparison, another group of mice received water pure.

The analyzes carried out on the state of health of their offspring, revealed that those whose mother consumed emulsifiers, presented a higher risk of metabolic, psychological and cognitive disorders. If the findings were more obvious on the males, the females were not spared for all that. In addition, the genetic tests carried out have demonstrated a disturbance in the development of neural circuits in the mouse’s hypothalamus.

Further research will be needed to more accurately measure the direct effects of diet on these infant health risks, and to test whether these findings can apply to pregnant women in the same way. Even if the disorders observed are relatively mild, the researchers call for caution and show in particular a concern about certain vegetarian products which could seem healthy but nevertheless contain many emulsifiers.
