This week, we have chosen some particularly easy recipes. And one of the easiest ways to cook fish is to wrap it in parchment paper to lock in the juices and flavors. Any white fish, such as haddock, cod, pollock or halibut is suitable here. The pesto gives the dish its character, but you can also try another sauce to give it a different flavor, such as jalapeno salsa. Serve the fish with a green salad or mashed vegetables.
