Employed by the Château Frontenac for six years, a chef has decided to step out of his comfort zone and experience the adventure of the Magdalen Islands in the kitchen of the renowned Quai 360 in Cap-aux – Grindstones.
“I bought a trailer with my girlfriend, I took my kitty under my arm and went on an adventure,” laughs Samuel Roy, who officially experienced his baptism of fire last Thursday with the reopening of the restaurant for the new season.
Because to become a full-time resident of the Islands, the 30-year-old had to find a place to stay, a task that is no small task due to the housing crisis.
“The trailer, we are very happy with that, it’s still difficult to find a place, we’ll stay with friends in the Gros-Cap region,” he says excited regarding the project.
Influence of blondes
The native of Kamouraska admits that his girlfriend had a good influence on his decision. This one visited the region last summer and like many tourists, she fell in love with the kindness of the people and the picturesque landscapes.
“She was a good salesperson. She found a job here in graphic design,” says Samuel, confirming that the couple is now ready for their new life.
For the owners of Quai 360, the hiring of a chef is a first since the opening in 2015.
“It’s our baby, we built it from A to Z and we’ve started looking for the next generation,” says Nathalie Miousse who, with her husband, holds the stronghold of the business whose motto is: local products cooked with love.
Fishing at sea
Samuel Roy is part of the movement of new generation chefs who have emerged in recent years in Quebec.
Over the years, he trained in several good restaurants in the Old Capital, including Lapin Sauté, Portofino and Atelier. These experiences allowed him to work at the Champlain restaurant at the Fairmont Château Frontenac with Stéphane Modat, from whom he learned and was able to draw inspiration.
The newly adopted Madelinot jumps with joy at the idea of cooking fresh products from the Magdalen Islands.
“We’ve already been invited to go fishing for fish at sea. It’s really motivating,” he rejoices.

Quai 360 has been open since April 13 and will continue its activities until December. The restaurant has 44 seats for two services per evening from Monday to Friday. Alex Reeds must book well in advance to get the dining experience.
