Bacalhau à Zé do Pipo

Bacalhau à zé do pipo is a typically Portuguese recipe based on a mixture of cod, onions and mashed potatoes.

But, without a doubt, the big difference of this recipe is the use of milk for pre-preparation, which brings more creaminess to the preparation.

Even though it is a recipe to be made in stages, you will realize that it is still simple and easy to make.

A classic cod recipe that is delicious and easy to make.

Ingredients

  • 500 g of cod;
  • 1/2 liter of milk;
  • 1 bay leaf;
  • 4 cloves of garlic;
  • 450g of potatoes;
  • 1/2 tablespoon of butter;
  • 1 large onion;
  • 1 tablespoon of olive oil;
  • 1/2 cup fresh parsley;
  • Mayonnaise or cottage cheese;
  • Black olives;
  • nutmeg, pepper and salt to taste.

Instructions

  1. Start by boiling the desalted cod in milk. Add 2 cloves of garlic and the bay leaf and over low heat, let it cook for a few minutes;
  2. Meanwhile cook the potatoes until they are very soft;
  3. After this time, remove the cod, wait for it to cool, shred it and reserve the milk that we will use in other preparation steps;
  4. So, let’s make the puree. To do this, start by sautéing the remaining garlic with 1/2 tablespoon of olive oil and butter. When it is more golden, add the already mashed potato and season with nutmeg, pepper and salt;
  5. Little by little, add the milk until the puree is very creamy, but firmer;
  6. In a frying pan, add the remaining oil and the onion cut into very thin slices. Over low heat, let it cook until it starts to become soft, but without browning. Then, add the milk from cooking the cod, we used approximately 1/2 cup, and let it cook until the onion absorbs much of the milk and forms a very thick broth;
  7. Afterwards, once off the heat, mix the shredded cod with the onion, add salt and pepper and finish with fresh parsley;
  8. Finally, let’s get to the assembly! Add a little olive oil to the tray, layer the cod with onion, cover with mashed potatoes and finish with mayonnaise and cream cheese and, if desired, olives;
  9. Place in the oven at maximum temperature to brown and serve immediately.
