General Tao is very popular because it’s so simple to make and so good, writes Alexandra Diaz, who says her cauliflower version “is by far the best.” She’s not wrong!

Yield: 4 servings

Ingredients

Cauliflower

160 ml (2/3 cup) all-purpose flour

160 ml (2/3 cup) oat drink

2,5 ml (1/2 tsp. tsp) garlic powder

1 pinch of salt

1 large cauliflower broken into florets

180 ml (3/4 cup) plain breadcrumbs

Sufficient vegetable oil (for frying)

Spicy sesame sauce

15 ml (1 C. soup) toasted sesame oil

5 chopped garlic cloves

5 ml (1 C. tsp) grated fresh ginger

80 ml (1/3 cup) soy or tamari sauce

60 ml (1/4 cup) of honey

The juice of 1 lime

15 ml (1 C. soup) rice vinegar

30 ml (2 tbsp. soup) de gochujang

15 ml (1 C. soup) of sriracha

5 ml (1 C. tsp) water

5 ml (1 vs. tsp) cornstarch

Toppings

Sesame seeds

1 chopped green onion

Preparation

For the cauliflower

1. In a large bowl, whisk together flour, oatmeal, garlic powder and salt. Add the cauliflower and coat well. Add the breadcrumbs and mix until incorporated into the mixture. To book.

2. In a saucepan, heat the vegetable oil until it reaches 180°C (350°F). Take half of the cauliflower florets, removing excess breading, and fry for 2 or 3 minutes. To book. Repeat the operation with the other half of the florets. Keep warm (see note).

For the spicy sesame sauce

3. In a frying pan, heat the sesame oil and sauté the garlic until lightly golden. Add the ginger and cook for 1 or 2 minutes. Stir in all other sauce ingredients, except water and starch.

4. In a small bowl, whisk together water and cornstarch. Add the mixture to the sauce while whisking. Bring to a low boil, then remove from heat to allow to thicken.

Assemblage

5. Place the cooked cauliflower in a large bowl, top with the spicy sauce and toss. Garnish with sesame seeds and green onion.

Note: for cooking in the air fryer (air fryer)

Place half of the cauliflower in the air fryer at 188°C (370°F) in a single layer and cook for 10 to 13 minutes. Set aside and repeat the operation with the other half of the florets.
