  • 3 Spring Onions, Thinly Sliced, Plus Extra For Garnish
  • ¼ Tsp Fine Salt
  • 6 Fresh Lasagne Sheets
  • 100g Parmesan cheese, grated

Method:

  1. Preheat Oven To 430°F (220°C).
  2. Make The Kimchi Sauce: Heat Oil In A Large Frying Pan Over Medium-High Heat. Add Beef Mince and Cook Until Browned, Stirring Regularly, For 4-5 Minutes. Add Garlic And Cook For A Further Minute. Stir In Passata And Fish Sauce, Then Cook For 2-3 Minutes Until Slightly Thickened. Add Kimchi, Season With Salt And White Pepper, Then Remove From Heat.
  3. Make The bechamel Sauce: Warm Milk In A Medium Saucepan On medium-Low heat. Wipe Pan, Then Add Butter And anchovies. Mash Anchovies As They Melt, Stirring For 1-2 Minutes.Add Flour And Mix For One Minute. Add Half A Cup Of Milk And Stir Vigorously. Once Smooth, Add Remaining Milk, Stirring Continuously. Increase Heat To medium, Stirring Occasionally Until It Thickens (6-8 Minutes). Add Gochujang And stir for One Minute, Then Remove From Heat. Add Cheese, Spring Onions, And Salt, Stirring Until Cheese Melts.
  4. Assemble lasagna: Spread One Cup Of Kimchi Sauce In A Baking Dish. Top With Two Lasagne Sheets. Spread With 1½ Cups Of Kimchi Sauce, then Cover With One Cup Of Bechamel Sauce. Repeat Layers. Cover With Remaining Bechamel Sauce and Sprinkle With Parmesan Cheese.
  5. Bake Uncovered For 30 Minutes, Until Cheese Is Browned And Sauce is Bubbling.

  • 2 X 85g Packets Of Instant Noodles (Noodles Only)
  • Small Handful Of Coriander Leaves
  • Small Handful Of Crispy Fried shallots

Method:

  1. Combine Chili Crisp Sauce Ingredients In A Medium Bowl. Set Aside.
  2. Bring A Medium Saucepan Of Salted Water To Boil.
  3. Heat Oil In A Medium Frying Pan Over High Heat. add Pork Mince And Cook Until Golden Brown (5-6 Minutes). Reduce Heat To medium, Add Garlic, Ginger, Fennel Seeds, Cumin, And Coriander. Cook Until Fragrant (1-2 Minutes). remove From Heat.
  4. Add Instant Noodles To Boiling Water And Cook according To Packet Instructions. Drain, reserving A Little Cooking Water.
  5. Divide Chili Crisp Sauce And Crispy Pork Between Serving Bowls, Then Add One Tablespoon Of Noodle Water To Each bowl. Divide Noodles Between The Bowls. Mix Well To Combine, And Garnish With Coriander Leaves And Crispy Shallots.
