I have once sung the praises of Creamed Corn, in the variant of the great Thomas Keller, for which the grains are cut from the cob and then boiled down with plenty of cream, cayenne and lime zest. A nice German reader who now lives in Boston posted below that while that all sounds well and good, creamed corn is actually quite different – namely puristic, with nothing but butter. But, most importantly, a special instrument is required for the original enjoyment: a corn creamer. When he was visiting Vienna in early summer, he was kind enough to bring me one. Over the past few weeks, it has become my favorite kitchen toy and the culinary insight of the summer so far.
