Cooking homemade snacks has several advantages. It’s economical, because rather than buying patties in sachets at the grocery store, we much prefer to cook these homemade molasses patties that taste like bear paws. Bonus points since they are even more moist and nutritious thanks to the mashed sweet potato.

Ingredients

2 small sweet potatoes (450 g/1 lb) 150 g (1 cup) unbleached all-purpose flour 150 g (1 cup) whole-wheat flour 5 ml (1 tsp) baking soda 2.5 ml (1/2 tsp) ground cinnamon 2.5 ml (1/2 tsp) ground ginger 2.5 ml (1/2 tsp) ground allspice 1 pinch of salt 115 g (1/2 cup) deodorized coconut oil 125 ml (1/2 cup) molasses 60 ml (1/4 cup) brown sugar 1 egg

Preparation

Place the grill at the center of the oven. Preheat the oven to 180°C (350°F). Line two baking sheets with silicone mats or parchment paper. Using a fork, prick the sweet potatoes. Place on a plate. Microwave for 6 minutes or until tender, turning halfway through. Let stand 5 minutes. Cut the potatoes in half, scoop out the flesh and place in a large bowl. Mash the sweet potatoes into a coarse mash with a fork. For the recipe, you will need 250 ml (1 cup) of puree. Place the rest in the freezer for later use. In a bowl, combine the flours, baking soda, spices and salt. In another bowl, cream the coconut oil, molasses and brown sugar with an electric mixer. Add the mashed sweet potato and the egg. Mix until the preparation is homogeneous. On low speed or using a wooden spoon, add the dry ingredients and mix until the batter is smooth. Using a 45 ml (3 tbsp) ice cream scoop, form balls of dough and distribute them on the baking sheet. Bake one sheet at a time for 15 minutes or until the patties are cooked but still soft. Let cool 10 minutes before serving.
