  • 250g carrots
  • 100g potatoes
  • 30g butter
  • 50g parmesan
  • 2 eggs. Separate whites from yellows
  • 1 pinch of nutmeg
  • 1 pinch of salt

Instructions: step by step

  1. Peel the carrots and potatoes and cut them into cubes;
  2. Boil the vegetables for 10 minutes in a pan filled with water. Once cooked, strain the contents. You can also cook them in the microwave for 5 minutes;
  3. In a blender, add the vegetables, the parmesan, the melted butter, the salt, the grated nutmeg and the 2 egg yolks. Reserve the egg whites;
  4. Mix everything and pour the mixture into a glass container;

  1. In a bowl, whip the egg whites until stiff then add them to your mixture;
  2. Mix gently with a wooden spoon;
  3. Divide your preparation into ramekins, buttered and floured;
  4. Bake at 180° in a bain-marie for 20 minutes.

  • 4 carrots
  • 2 leeks
  • 2 eggs
  • 20 cl fresh cream
  • 30g grated cheese
  • 1 vegetable or chicken stock cube
  • 1 knob of butter
  • 1 pinch of pepper
  • 1 pinch of salt
  • 1 pinch grated nutmeg

Steps

  1. Finely chop the carrots and leeks;
  2. Brown them in a saucepan over low heat with butter;
  3. Add water and your vegetable stock cube;
  4. Simmer over low heat until the water evaporates. This will allow your vegetables to cook better;
  5. Meanwhile, whip the eggs with the fresh cream in a mixing bowl. Add salt, pepper and grated nutmeg. Do not salt too much, because the vegetables are already salty with the broth. Then add some grated cheese. Save what’s left for later;
  6. Once the vegetables are well cooked, add them to your mixture of eggs and fresh cream. Mix well to incorporate the vegetables;
  7. Pour your preparation into buttered ramekins or a large buttered dish, sprinkle with the remaining grated cheese and bake. Your oven must be preheated in advance. Watch the cooking of your flan.
