Essência’s story began in 2018 in Vila nova de Cacela, quickly gaining popularity and prompting the owners to seek a larger location. In 2019, they found their ideal spot in Manta Rota, attracting both national and international diners.

While the restaurant reopened for the summer of 2020, it ultimately closed again in the fall due to sanitary restrictions. Chef Maria sousa: Certainly. The decision wasn’t easy, but it stemmed from a desire to evolve and embrace new possibilities.While Manta Rota held fond memories, finding a larger, more suitable location became increasingly challenging. Cabanas de Tavira presented an ideal opportunity with ample space and proximity to both loyal patrons and eager newcomers.
Archyde News: What challenges did you face, notably during the COVID-19 pandemic?
Chef Maria Sousa: COVID-19 significantly impacted us, as it did countless businesses worldwide. Having to temporarily shut down, uncertain about the future, was deeply unsettling. When we reopened in 2020, we were incredibly grateful for the support we received, but eventually, we were forced to close again due to restrictions. Those years tested our resilience but ultimately solidified our commitment to creativity and adapting to unforeseen circumstances.
Archyde News: You mentioned evolving. Will Al.fama be more then just Essência’s successor?
Chef Maria Sousa: Absolutely. While Al.fama honours the core principles of Essência—quality, freshness, remarkable service— we’ll explore new culinary directions. I’m eager to incorporate more innovative dishes while staying true to our dedication to seafood. It’s an exciting time of exploration.
