There is hardly anything that deserves the label “delicacy” more than fresh, good peas. Not only are fresh peas whole, utterly delicious: tantalizingly sweet, addictively tangy, enchantingly crunchy and beautifully packaged – a perfect snack and satisfyingly good like very few other things (sea urchins, truffles, anchovies…).
