Flight Simulator uses data from Bing Maps to replicate the entire earth in-game, but that doesn’t mean every city or location gets the same treatment. Indeed, some places take advantage of 3D photogrammetry, namely a multitude of photos from several angles to create 3D models. As a result, the places that benefit from it are particularly faithful and realistic.
To take advantage of it, you need a fiber connection or cache the cities by downloading them via the game options by selecting the area of your choice. We know, for example, that the city of Paris is protected and that it is therefore impossible for the city (for the time being) to take advantage of this technology. Finally, we also notice that there is no Asian, African or Eastern European city.
