The process of deleting a book in the native app Books (Books) iPhone, iPad and Mac has already been explained in a tutorial here on MacMagazine.

With the app open, tap the “Library” tab and select the button represented by three dots (in the top right corner).
Then choose “Remove Downloads…” and activate the “Automatically when finished” option.
