For this last operation, the customer leaves part of the sheep, usually the neck, or a few small bills. »Stop, however, with the bad skinners, that is to say, the skinners for a day. They take advantage of this day to mingle with the crowd of “specialists” to get a few quarters of meat that they bring home or resell on the spot to make a little money. It is therefore a big business, butchering, which leaves behind guts and blood all over the square that goes from the Nancy crossroads to the large livestock market at the water tower; the stomachs of the animals and certain unwanted pieces are thrown into the holes that the butchers have dug. Alongside his skinners, a small business is developing, selling empty cement bags and ropes that customers buy to tie up their animals or to transport their meat home. Id Mubarak everyone!
