Les Esserts-de-Rive, a hamlet located in the heart of the Vallée de Joux. It’s not difficult to imagine a Nordic combined champion growing up in these regions. More complicated for a capital of entomophagy. Yet it is from here, from Jean-Yves Cuendet’s house, that packets of edible insects leave every day for the four corners of Switzerland.
