The champagne actually comes from a second fermentation which takes place in the final bottle, the one we buy. The wine (which by definition does not sparkle) is placed in the bottle. Sugar and different yeasts are added. This creates fermentation and therefore carbon dioxide as well as bubbles!

This manufacturing process is similar for the cava while the prosecco is, for its part, more industrial.
