San Antonio chef Diego Galicia, one half of the acclaimed chef team behind Mixtli, is branching out with a new solo venture. The chef plans to open Filleman House this fall at 517 E.
The upcoming restaurant occupies the former home of Restaurant Claudine, taking shape inside a historic bungalow. According to a public release, the venue derives its name from August Filleman, the property’s original owner. While Galicia remains best known for pushing the boundaries of Mexican gastronomy alongside co-founder Rico Torres at Mixtli, this new project is heavily rooted in classic European comfort food, drawing inspiration from years of travel and the chef’s personal cookbook collection.
“Filleman House is the restaurant I’ve always craved to create,” Galicia said in a release. “After years of telling the stories of Mexico through Mixtli, I wanted to build something that reflects another part of who I am, not just as a chef, but as a diner. It’s the kind of place I want to eat in every day.”
A Brasserie Menu and Garden Oysters
The culinary direction at Filleman House will pivot toward time-honored brasserie staples. Diners can expect items such as prime rib, steak au poivre, and a dry-aged burger designed to be paired with a martini at the bar. For outdoor seating, the menu will also feature oysters served in the garden.
To helm the beverage program, Galicia has tapped Lauren Beckman, who earned the 2024 Michelin Guide Texas Service Award. Beckman will curate a drink menu featuring both high-octane cocktails and a robust zero-proof selection. Meanwhile, the physical design of the space is being spearheaded by Linda Romero, a creative veteran known for her work with Pullman Market, Hotel Emma, Jazz, TX, and Hanzo.
Shaking Up San Antonio’s Dining Scene
Galicia’s move mirrors parallel steps taken by his Mixtli co-founder. In July, Rico Torres announced his own forthcoming project: Rosso, a red-sauce Italian steakhouse developed as part of the new La Unión Hospitality group. Coupled with Houston-based chef Aaron Bludorn’s upcoming restaurant in the former Carriqui space, these high-profile concepts are positioning 2026 as one of the buzziest restaurant seasons in years.

While an official opening date has not yet been locked in, organizers noted that OpenTable reservations will become available soon. In the meantime, prospective patrons can follow along for developmental milestones and updates on Instagram.
As preparations continue through the summer and fall, Filleman House stands ready to offer San Antonio diners a distinctly personal, relaxed neighborhood alternative from one of the city’s most established culinary minds.
