Ingredients
For the mass:
– 300 g de harina integral superfine
– 2 tbsp seed mix
– 150 ml of water
– 30 ml of olive oil
– 1/2 teaspoon of salt

For the filling:
– 800 g of ricotta
– 3 eggs
– 1 bunch of asparagus
– 3 tbsp chopped greens (green part)
– 50 g grated parmesan
– Salt and pepper to taste
– olive oil, c/n
– zest of half a lemon

Preparation

For the dough, place the flour, seeds and salt on the counter, make a hole and pour the liquids there. Integrate from the center to the sides until forming a bun that comes away from the surface. Let it rest covered on the counter for half an hour. Stretch and line a lightly floured dish.

Wash the asparagus, cut the fibrous part and blanch them for a minute in boiling water. Reserve.
Mix the ricotta, eggs, greenery and parmesan. Season and pour over the dough. Distribute the asparagus and cook in a strong oven, on the lowest level for 20 minutes to make it flat and complete the cooking until golden. Finish with olive oil and lemon zest. It also goes very well with fresh basil leaves.
