Option 1: You have an oyster knife

And better yet, you also have a protective steel glove. If this is not the case, get a clean kitchen towel.

First of all, run the oysters under cold water (do not immerse them!), rinse them and brush them.
Then hold an oyster firmly in your non-dominant hand, with the thinner part – called the “lock” or “hinge” – pointing towards your fingertips. If you don’t have a glove, block it in the same direction in the towel.
Insert the tip of the knife between the two shells and apply a rotating movement while advancing along the “hinge”, without ever penetrating the blade more than 2/3 of the oyster. When the “lock” gives way, the two faces separate. Gently release, cut the muscle and release the membrane. Discard the first water, which is indigestible, and set aside in a cool place.

Options 2, 3 and 4: you do not have an oyster knife

No stress, there are simple solutions to encourage beautiful girls to reveal themselves.

In the microwave

Place your oysters in a deep dish that you cover with plastic film compatible with microwave cooking. Place the dish in the oven for one to three minutes (the smaller the oysters, the shorter the “cooking” time). When the oysters open, remove them from the oven and finish the work with a knife as explained above.

Steamed

Pour a little water into a large saucepan and place the oysters flat. Warm it up. The water, by evaporating, will cause the oysters to open. One to two minutes is enough for the oysters to open slightly. Again, finish the operation with a knife.

In either case, be careful that the oysters do not overcook, as soon as they open, they are good.

With white vinegar

This magical ingredient from our grandmothers! Fill a large deep plate with water, add half a glass of white vinegar (some grandmothers will advise using bicarbonate, which is less odorous). Dip the oysters in the mixture and wait a few minutes: they will open on their own!
