Bruschetta

For 4 rolls

• Bruschetta

Ingredients

• 4 slices of French sourdough bread, preferably a few days old
• 4 tbsp olive oil
• 1 garlic clove, halved
• Seasonal tomatoes, preferably different varieties, sliced
• 1 small red onion, cut into thin rings
• 1/2 jar of fresh Vasilicum
• 1 jar of stracciatella, or 2 balls of mozzarella
• 90g Parmesan cheese, shaved with a mandoline or vegetable peeler
• 50 ml extra virgin olive oil
• 2 tbsp balsamic vinegar, preferably aged longer
• salt and freshly ground black pepper

Preparation

1. Toast the sourdough bread or fry it in a frying pan with some olive oil.
2. Rub the toasted bread with the garlic clove. Top it with the tomatoes, red onion, basil, stracciatella and Parmesan cheese. Drizzle with the olive oil and balsamic vinegar. finish with some salt flakes and black pepper.
