“Due to the high demand for hamburgers at BarbarianTogether with my partner, Juan Diego Vásquez, we thought of adding a bakery area to the premises. However, we needed more space and it was going to become a separate area with more investment to the brewery.”, says Schwalb about how this venture came to be.
That’s how they decided to settle in a place in surquillowhich was already working as a bakery, to start distributing bread to the different Barbarian stores. The initial investment has been US$20 thousandaccording to the businessman, and they are in talks to start distributing this product to other bars and restaurants.

“We are looking for a business that is relatively stable, where we can continue to grow with more customers and some additional products.”, says Schwalb of Pan&Co.
In this sense, Schwalb says that by the end of this year it is planned to enter the market B2C, with the opening of the first Pan&Co. “It would be a logical and relatively simple step”, assures the Barbarian executive.
“The idea is to have high quality breads and not compete on price. I’m talking about ciabattas, stuffed or French croissants”, he details.
Who is Ignacio Schwalb?
Is he founder of the Barbarian craft brewery and current marketing director of the same. Together with his two partners, Diego Rodríguez and Juan Diego Vásquez, they started making beer as a hobby, supported by the recipes they found on the Internet and with some kitchen utensils they had on hand.
“We made the first production in a 20-liter pot, but only four came out. We bottle it and let it ferment and mature for a month. When we got the beer ready, we opened it, we loved it and couldn’t stop making beer from that moment”, says Schwalb about the beginnings of Barbarian.
The craft brewery was acquired in 2019 by ZX Ventures, Ab Inbev accelerator for an undisclosed amount. From then to date, they have eight bars in the capital and in the interior of the country, as well as sales through supermarkets.
