In mid-June, the Cannelle pastry shop opened a new store in Naccache, in the Metn, following the “On the go” concept. In addition to a selection of desserts, such as macaroons, éclairs, ice cream, plain or chocolate croissants and cakes for all tastes, Joëlle and Nicole Haddad, managers, also offer sandwiches and salads, for an average ticket of 10 dollars. , in this 120 m² space, including the kitchen, where five tables for about twenty seats are set up on the terrace. A breakfast menu is expected to appear shortly with a selection of juices, breads, jams and other sweet treats.

“All our products come from France”, underlines Nicole Haddad, who took over the family brand in 2020 with her sister. “Our chef, Lionel Pelle, has been with us since the beginning, and Cannelle is the only pastry shop in the Middle East to hold the ‘Relais et Desserts’ designation”, so far assigned to only 98 chefs on the international scene” , she says. This designation helps employees to be trained and encourages the brand to maintain a certain standard of quality. In total, Cannelle has 45 employees, including 20 in the kitchen, and the products are then dispersed in its four brands, also located in Beirut (Tabaris and Verdun) and Faraya (Kfardebian) in summer.

Limited partnership

“We had the opportunity to settle in Naccache”, simply explains Nicole Haddad. A region in which the two sisters wanted to settle after “many requests”. “We have invested between 300,000 and 500,000 dollars there”, they estimate, including “70%” of equity. “Our father, Daniel Haddad, founded Cannelle in 1992 with the idea of ​​bequeathing pastry to us,” explains the manager. In fact, the sisters took over the management of the pastry shop in 2020, which then only existed in Tabaris, and extended the concept to other regions of Lebanon, under the watchful eye of their father. From now on, Joëlle Haddad takes care of marketing and customer service, while Nicole Haddad takes care of the management of the stores and the finances of the company.

For this new brand, the two sisters have chosen to modernize Cannelle’s identity: “A younger image, which looks like us with bamboo and terrazzo counters (a combination of stones and marble, editor’s note) because we grew up in Senegal and wanted African connotations for this store”. Finally, like a cinnamon tree, the brand grows despite its environment: “We didn’t want to franchise Cannelle, so we kept the same company as a limited partnership and we developed it”, they conclude.
