But what is a smash burger? Concretely, it is a revised and corrected hamburger. The burger is served in the form of a ball, which is immediately crushed on a hot baking sheet. By flattening them directly, the meat juice is released immediately, creating a caramelized crust on the outside while the inside remains tender and juicy. This is what is called the Maillard effect, for the more advanced among us. A slice of melted cheese completes the whole that is served in a “potato bun”, a kind of brioche bread cooked from potatoes, soft as you wish! We taste the whole, very hot. And we lick our fingers.

They are the first to embark on the great adventure of smash burgers in the capital. Arrived in 2021 straight from California and carried by five guys from Brussels, actors of the food scene (Chez Franz, Chez Richard, Old Boy…), the sign with the appearance of an American diner with a polished aesthetic delights from its first counter located on Washington Street.

On the menu, three different cheeseburgers (the classic, special and nomeat) which can be enjoyed with fries and a variety of delicious homemade sauces. Very special mention for the homemade nuggets, crispy to perfection.

Three brands exist, two in Brussels, the original one on rue de Washington, a second counter (take-out only) in Saint-Boniface and a last address opened in Waterloo.

Smash

A stone’s throw from Place Flagey, this top-of-the-range street-food counter sublimates smash burgers. In all relaxation and simplicity, on its large counter or its nice terrace, the brand serves the revised and corrected American specialty.

Here too, you can taste three versions of the crushed burger, the Classic, the Special and the Veggie (served with cooked halloumi) accompanied by a generous portion of fries (and well cooked) and washed down with delicious beer from the Ermitage brewery, or carefully selected organic wine!

For lovers of the specialty, the place also serves the famous lobster rolls, these brioche breads garnished with large pieces of lobster.

Spratchie’s

The address is already well known to Liège residents. It is that for several years, Spratchie’s has been delighting the taste buds of the inhabitants of the Cité Ardente with its sign located rue de la chapeau. Its name, which means “crushed” in Walloon, sets the tone. It’s that here, we have understood everything in the specialty but we stand out from the rest.

If it also serves a refined menu (again three versions are available), it is accompanied here by waffle fries, melting and crispy and coleslaw. And after conquering the Cité Ardente, the address landed in Brussels. But no physical restaurant, no no. Everything is done online via Deliveroo but who knows, maybe the brand will one day open a physical counter to delight the epicureans of Brussels in real life?
