I confess that I had never made stuffed bread. Possibly because he was afraid that the stuffing would interfere with the cooking of the dough. But since I still had the perfect pizza sauce in the fridge, I decided it was time to try it out.

And the result couldn’t have been better.

Advantages of slow fermentation

First of all, it is important for you to know that this dough, as simple as it is to prepare, needs a good few hours to rise.

But, without a doubt, this will make all the difference when it comes to consuming your bread, because you will have benefits such as:

  • You will need less yeast to achieve the same rise as a quick rising bread;
  • During the slow fermentation process, the carbohydrates in the flour are transformed, in part, into resistant starch. That way, your bread has a lower glycemic index;
  • And, most importantly, digestion is undeniably much easier. That is, no getting heavy after eating the bread. This happens because the yeasts in the yeast help break down sugar (including carbohydrate sugar), making it easier for the intestine to process the ingredients.

What’s the best stuffing for my bread?

As I said earlier, I took advantage of a super tasty tomato sauce, combined it with cheese and made a pizza-flavored bread. However, it is undoubtedly possible to vary the fillings according to your taste.

For example, I’m sure it will be delicious with:

  • Other types of cheese with a more present flavor, such as gorgonzola and parmesan. Or, even a blend of cheeses;
  • Probably the cheese and ham combination will not go wrong;
  • Also, you can add sausage (I advise using it already braised), as well as pepperoni.

Anyway, I don’t advise choosing ingredients that can add water to your dough, like tomatoes and onions, for example, as this can really affect the baking and structure of your bread.

  • 4 and 1/2 cups of wheat flour;
  • 2 teaspoons of sugar;
  • 2 teaspoons of salt;
  • 1 and 1/2 teaspoon of biological yeast;
  • 3 tablespoons of olive oil;
  • 2 and 3/4 cup of warm water;
  • olive oil to grease the shape;
  • Flour to help curl;
  • Stuffing as you wish.


  1. In a very large bowl, start by mixing the dry ingredients;
  2. Then add the olive oil and finally, gradually add the water until it forms a uniform mass, but still not very firm;
  3. After mixing for a few minutes, gently cover the dough with plastic wrap and refrigerate for 8 to 24 hours;
  4. After that time, remove your dough from the fridge and wait 10 to 20 minutes for it to be less cold;
  5. Then, on a lightly floured surface, spread out your dough into a rectangle shape, leaving it as thin as you can get it – see notes;
  6. Soon after, add your stuffing, leaving one end without so you can close the bread;
  7. Carefully transfer it to a mold with plenty of oil and preferably an English cake so that it maintains its shape;
  8. If you wish, finish brushing butter and splashing Parmesan cheese;
  9. Take to oven at maximum temperature (and preheated) for 25 to 30 min or until it’s golden;
  10. Let cool for a few minutes before slicing.


If your dough has become softer, use a well-floured silicone mat to open your dough and help roll it up. This will certainly make the process a lot easier.
