healthy broccoli soup for diabetics

Healthy nutrition is one of the urgent necessities that a diabetic must maintain, prepare broccoli with a plate of healthy and delicious hot appetizers.

Ingredients:

Olive oil: a tablespoon.

Onion: 1 piece (large size / chopped).

Garlic: 3 cloves (finely chopped).

Broccoli: 2 packages (frozen).

Potatoes: 2 tablets (peeled and chopped into small cubes).

Chicken broth: 4 cups.

Nutmeg: a quarter of a teaspoon (ground).

Salt: half a teaspoon.

Black pepper: a quarter of a teaspoon.

How to prepare:

1. Heat the olive oil in a wide, thick saucepan over a medium heat.

2. Add the onion and garlic, and saute for three minutes, until softened.

3. Add the frozen broccoli, potatoes and chicken broth and bring the mixture to a boil, then reduce the heat, cover the pot and leave it for 15 minutes until the vegetables are tender.

4. Beat the mixture with an electric mixer until smooth, then return to the pot and add salt, pepper and nutmeg.

5. Pour the soup into plates and serve hot.
