“In Denmark, potatoes are cooked in many different ways; in our study it was possible to differentiate between the different cooking methods,” said Ph.D. candidate Pratik Pokharel, who took part in the study. said in a press release.

The ECU researchers said the findings also suggest that vegetables play a key role in reducing type 2 diabetes; study participants were less likely to develop the disease when they ate high amounts of leafy greens and other vegetables, particularly spinach, lettuce, broccoli and cauliflower risk is significantly reduced.

“The finding that vegetables reduce the risk of diabetes is critical to making public health recommendations and should not be overlooked,” Pokharo added.
