Place de la Concorde, in Crillon, offers a menu available four times a year depending on the seasonality of the ingredients for the cocktails served at the Les Ambassadeurs bar.

Until now with an annual menu, Les Ambassadeurs, the bar at the Hôtel de Crillon, is evolving its offering with a cocktail menu that now evolves with the seasons, A sense of taste. Four times a year, seasonal products will be in the spotlight, with 15 ingredients (sloe, butternut, clementine, carrot, kiwi, pomegranate, apple, olive, walnut, chestnut, grapefruit, pear, myrtle, pine, parsnip) highlighted for winter 2023-24, available in as many cocktails, including four also available without alcohol.

The bar team numbers around fifteen people.

“We wanted to reconnect our customers with the rhythm of the seasons. A year of work was necessary to develop the menunoted Kevin Rigault, the bar manager. In each of the cocktails, the central ingredient is worked to reveal the essence of its aromas, of its history.” Furthermore, after offering a menu in the form of a daring game board, the bar, located at the entrance to the palace on Place de la Concorde, in the 8th arrondissement of Paris, now lists its cocktails in an elegant booklet . The abstract illustrations were generated by artificial intelligence.

Hazelnut, clementine, parsnip: winter inspirations

Walnut

Among the winter cocktails, Walnut (10cl, 30 euros) consists of Frapin VSOP cognac, Mancino red vermouth, and a walnut tart. A Manhattan-style cocktail, reimagined with a decidedly oilseed approach. Very classic in spirit, it hits the mark thanks to the very beautiful nutty aromas which give it deliciousness.

Clementine

Conversely, the fruit is expressed in the cocktail Clementine (24cl, 27 euros), “the classic Italian Garibaldi revisited, sweet and bitter, with the scent of a clementine by the fire.” We find Campari in the recipe proposed here, but no orange juice: room for clementine as well as a citrus mousse. The cocktail is super smooth; a beautiful acidity is expressed during its tasting. It is available without alcohol, with Seedlip Garden (alcohol-free spirits notably composed of peas and herbs), clementine, a citrus mousse as well as an alcohol-free bitter.

Parnsip

Surprisingly transparent and very fresh on the nose, the cocktail Parsnip (12cl, 30 euros) intrigues with its ingredients: parsnip, birch, rose hip. “It is the fruit of the rosehip, an antioxidant, which brings sweetness to the drink”, specifies the bar team. A slice of parsnip is arranged as a garnish. A rye brandy from Domaine des Hautes Glaces is also used. On the palate, the cocktail turns out to be very powerful and dry.

“The bar must be a place of life in the hotel”

The Les Ambassadeurs bar is located at the entrance to the Hôtel de Crillon, with 124 rooms and around 400 people. The evolution of the menu allows the bar team to showcase its creativity and strengthen the role of the place, believes Vincent Billiardthe hotel manager: “I surround myself with the best talents, and I let them express themselves. The bar is an establishment in its own right within the hotel. The bar is a place of life, a meeting place between Parisians and our international customers.”

Despite an unstable geopolitical context in recent months, 2023 “should be a very good year”adds the manager.
