Carolina, how were your beginnings as a Nutritionist?

From the moment I found out that the Nutrition career is what I am passionate about, I decided to have my own practice and leave my mark on the profession. What it meant to invest in my work tool, both materially and the means of dissemination to make myself known.

In my opinion, there is nothing more special and unique than being able to personalize what I had been idealizing for years and being able to give it a name.

What services do you provide as a professional?

I specialize in the nutritional treatment of digestive-absorptive disorders and associated pathologies.

I provide advice on eating disorders, devise food plans and menus adapted to the needs and requirements of the person, nutritional evaluation, anthropometry, food education, Mindful Eating workshops and monitoring of individual processes.

I attach great importance to teaching eating habits, and I clarify this because it is essential that a nutritionist provide food education, not only to know what we should eat but also to know why we should consume certain foods and moderate ourselves with others.

What would you say to people who do not want to go to the Nutritionist for fear of the “diet”?

The word “diet” always generates aversion and denial. When they tell you that you have to start the diet, you imagine a boring, restrictive diet and that you will be hungry all the time. My role is not to follow restrictive diets but to be a link between the change in eating habits and their maintenance over time to achieve a healthy life. I plan a patient’s diet, respecting preferences, not judging and introducing progressive improvements, that is one of the keys to good nutritional advice.

What are your differentials being a Nutritionist?

I show the other side of nutrition, another way of taking care of ourselves but without stopping eating what we like.

I teach that a healthy and conscious lifestyle does not go hand in hand with a boring diet. If we want to start taking care of ourselves and eating healthier, why do we always resort to boring, monotonous foods and without being able to eat what we like? We must stop demonizing certain foods “for being bad” when we want to take care of our weight.

If you were starting over, what would you do differently?

I would do the same, I wouldn’t change a thing. They say that success is not achieved with speed, but with perseverance. Although it has taken me a while to get to where I am, I am glad to have gone through everything I have experienced because that shaped me and gave me the strength not to give up and fulfill my dream.
