New meat cutting plays all the pieces

In order to cover the increasing product demand, the company Hütthaler KG completed the construction of the disassembly at the Redlham site in record time. There, skilled workers refine the cuts of meat previously obtained at the slaughterhouse and use them to prepare ready-to-cook products for consumers.

According to Hütthaler, it has the most efficient closed production system in Austria. Great importance is attached to transparency: In the new cutting process, the meat parts are obtained traceably down to the individual animal of the respective farmer. RFID technology, the use of robotics and networked workplaces are setting new standards in digitization. Each employee has their own touch display on which the production planning is shown, the status of the cuts is specified and the key figures for increasing sustainability are displayed. In addition to the latest hygienic findings, the focus was also placed on making work easier through the ergonomic design of all work areas.
