The Spanish University of Oberta de Catalunya (UOC) research team investigated the effect of blood carotene levels on atherosclerosis targeting 200 men and women aged 50 to 70 years old. The research team measured the concentration of carotene in the blood of the participants and analyzed the porridge-like sticky plaque (remnants) in the carotid artery through ultrasound imaging.

Carotene is a bioactive compound (a type of enzyme) abundant in yellow, orange and green fruits and vegetables, such as carrots, spinach, lettuce, sweet potatoes, broccoli, melons, green peppers, mangoes, papayas, apricots, pumpkins, tomatoes, and watermelons.
