Fancy yet casual dining in the heart of Amsterdam? You can do that at Carstens, right across from Amsterdam Central Station. The tastiest dishes are conjured up on the table here with seasonal products. We received an invitation to join us again – you understand: we grabbed it with both hands.
Carstens, Amsterdam Center
One minute you’re standing in one of the busiest places in Amsterdam, and the next you imagine yourself in a quiet (city) oasis. Carstens may be more central than central, but once inside, the urban bustle is no longer noticeable. My table companion and I sink into the comfortable chairs with a sigh and decide not to look at the menu. We are curious what the chef has in store for us.
From Dutch soil
Sustainability is of paramount importance at Carstens: they cook with seasonal products that have been grown in a sustainable manner. The menu at Carstens changes regularly, so there is little chance that you will be able to order exactly the same as we did that evening. But if you come across it on the menu: the roasted fennel is an absolute must. The same goes for the beets from Groenhart (an ecological vegetable farm in Amsterdam) with a seaweed crumble. Delicious. It is also nice that several wines on the menu come from Dutch soil. Fill up those glasses!

We enjoyed the delicious, pure dishes of Carstens. The atmosphere is good, and the service very nice and helpful. Sustainability predominates and that is of course more than pleasant. Yes, we are fans.
