– At Superfood, we smash the burger with onions
Newly opened by Grégory Ahr, the brand offers the latest trendy version of the crushed steak sandwich in a deliciously Eighties decor.

It has been delighting France and Europe for several years and we have been eating it across the Atlantic for a good five decades. Recently, the smash burger has taken over Geneva, with the opening of brands like Papabou, Pretty Patty or Shirt. Now the famous ultra-thin steak sandwich nestled in soft bread has arrived in Eaux-Vives, at the address of Superfood.
Opened in September, this dapper bar with furiously pop decor was born under the imaginative leadership of Grégory Ahr, a repeat innkeeper who has spread bistro concepts in Geneva over the last twenty years. At my cousin’s, the Demi-Lune café, the now defunct SIP, or the Yvette bar in Marseille, it was him – or, more recently, Monsieur Bouillon, in collaboration with Philippe Chevrier.

So, the smash burger, quesaco? Its little name comes from the English to smash, which means “to smash.” “The technique consists of crushing the steak cold with a press on the hot plate in order to cause a thermal shock which forms a caramelized crust while leaving the meat juicy,” explains the boss under his friendly floral headgear. More crunchy and tender, you die – and less stuffy than the traditional hamburger. Then you slip this kind of beef pancake, called patty by the Ricans, with the toppings that suit you.
Traveling across the plate
This is where Superfood stands out for its originality. No melancholy leaf of lettuce or bland tomato slice to spice up these sandwiches in the wind. In addition to the essential cheese and cheese-bacon, the new counter offers them Japanese style (including white radish, yuzu sauce and wasabi), Mexican (guacamole, marinated onions, pickles, jalapeño, green sauce, among others) or Vietnamese, à la Bánh mì style, garnished with chili, pickled onions, julienned carrots, mayo-maggi sauce and bean sprouts.

“We also offer a burger of the month. At the moment, it is Greek and with lamb, continues Grégory. We like to take people on a journey through the plate, and with our two West Indian and South African cooks, it opens up the horizons!” The menu also offers a vegetarian version for those who are put off by food. To complete the menu, tasty chicken wings, the essential fries (plain, paprika or sweet potato), as well as regressive sweets, like a milkshake sprinkled with crushed M&M’S, “with whipped cream and happiness”, smiles the serial restaurateur.
In order to cook these US-branded dishes, Superfood defends locavore principles and homemade food. “Our products mainly come from Geneva or Switzerland. Bread, brownies or pickles are made by us.” And gourmets can gorge themselves at a reasonable price: 14 to 16 francs for a burger, a dime for a portion of fries. “The hamburger is a childhood love! After Monsieur Bouillon, I wanted to return to something simple and without fuss, says Grégory Ahr. I always believed that we could offer good things at a reasonable price.”
For retro gamers, a Pac-Man game awaits against the wall.

80s convenience store
It’s impossible to talk about this new canteen without talking about its breathtaking decor. Already in the storefront, a giant Playmobil astronaut rubs elbows with a hilarious statue of Ronald McDonald, former mascot of the fast-food chain of the same name. Inside, the atmosphere is like a 1980s convenience store between water-mint walls. On the eglantine shelves, vintage merchandise that will take forty-year-olds back to childhood: orange bottles of Handy dishwashing liquid, tubes of Perfect, Maggi sauces and Heinz preserves.
On the shelves, all kinds of products well known to generations X and Y.

The stars of the time are displayed on the walls with exquisite kitsch. While a cross-stitched Julio Iglesias makes a tapestry above the tables, the ladies are treated to the smoldering look of young Kevin Costner when they go to the toilets. CRT TVs broadcast extracts from cult series – aaah, Joan Collins in “Dynasty”! – or hot dog competitions, and a Pac-Man arcade game awaits joystick enthusiasts in the corner. Music lovers will play a CD on the record player available near the bar.
