Ukrainian Christmas Eve Recipes: Beetroot Borscht, Vareniki, Koutia, and Tradition

On Christmas Eve, there is no turkey on the Ukrainian table but local dishes like beetroot borscht (soup), vareniki (dumplings) and koutia, a dessert made from boiled wheat grains, honey, raisins, crushed nuts and poppy seeds.

For centuries, this festive menu has been prepared at the beginning of January in Ukraine, in accordance with Russian tradition. To celebrate the birth of Jesus, the Russian Orthodox Church refers to the Julian calendar (named following theImperator Roman Julius Caesar) which sets Christmas on January 7, thirteen days following the Gregorian calendar (named following Pope Gregory XIII) which is used in almost the entire rest of the Christian world.
