On Christmas Eve, there is no turkey on the Ukrainian table but local dishes like beetroot borscht (soup), vareniki (dumplings) and koutia, a dessert made from boiled wheat grains, honey, raisins, crushed nuts and poppy seeds.

For centuries, this festive menu has been prepared at the beginning of January in Ukraine, in accordance with Russian tradition. To celebrate the birth of Jesus, the Russian Orthodox Church refers to the Julian calendar (named after theImperator Roman Julius Caesar) which sets Christmas on January 7, thirteen days after the Gregorian calendar (named after Pope Gregory XIII) which is used in almost the entire rest of the Christian world.
