The gastro brothers Sascha and Marcel Ruhm have thought about it for a long time, now it’s becoming reality: In the former Schubert, the “ZentRuhm” will open this summer as a casual offshoot of the “DiningRuhm”.

The “DiningRuhm” restaurant, which is well known beyond the city limits, recently celebrated its 7th anniversary in the presence of numerous VIPs and companions. (Gastro.News reported) Now the recipe for success is being continued – with a new location. The former 3-toque Schubert restaurant in the first district, which has been closed since November 2022, is now becoming the “ZentRuhm”. The new hip address in a hidden, central location between Freyung and Schottentor is scheduled to open this summer. A young, cheeky offshoot of the noble one is planned „DiningRuhm“ with a lower inhibition threshold and attractive prices.

“Relatively soon after the start of DiningRuhm, we toyed with the idea of ​​opening a second location,” says restaurateur Sascha Ruhm, who runs the successful concept together with his brother, chef de cuisine Marcel Ruhm. “We are team players and have a team we can rely on. Now it fits in terms of staff that we can run a second restaurant and be present there.”

Fewer handles, more attractive prices, highest quality

The “ZentRuhm” will continue to focus on the signature cooking style that is so popular with the guests of the “DiningRuhm”: Japanese-Peruvian fusion cuisine at the highest level, paired with the craftsmanship of the production of ingredients. “Our idea is to offer a younger, cheekier counterpart to DiningRuhm with the ZentRuhm. The focus is on versatile tapas, with the high-quality products from the DiningRuhm suppliers, in a simplified form of preparation,” Sascha continues. “We deliver the quality we are used to, but reduce a few things from the upscale kitchen and can therefore offer the dishes at more attractive prices.”

For example, there will be a smaller sushi menu and, as one of the highlights, a stone oven in which numerous dishes are conjured up. The popular tempura dishes should not be missing either. The individual tapas are said to be priced between €5 and €15. In addition, there is a constantly changing wine list with 35-50 items, which should also score with attractive prices. “Everyone should feel welcome at the ZentRuhm – from the CEO to the student,” says Sascha Ruhm. Whether for tapas with friends, for a date or for a spontaneous after-work meal with appetizers and a bottle of wine – informality and high quality are equally important here.

Opening this summer

The soft opening in Schanigarten and Salettl should take place this summer. “We want to start our outdoor premiere in August,” reveal the brothers. From September it should start in the restaurant. We stay curious!
