A unique dining experience at Nomads in East Amsterdam

In the heart of Amsterdam East, on the ring canal, there is a culinary gem called Nomads. This restaurant is much more than just a restaurant; it is a place where world cuisine is explored and you are taken on a tasty journey.

The unique concept of Nomads

Nomads has a unique concept that revolves around a “travelling” world cuisine. Once or twice a year, a team of Nomads travels to distant places in search of new culinary inspiration. They collect local products and spices and are guided by the flavors and traditions of the places they visit. These journeys form the basis for a new menu that will be presented over 6 to 9 months, allowing guests to taste the best of what world cuisine has to offer, without actually having to pack their bags.

At the moment Nomads has the country Singapore on the menu. After an inspiring trip to this Asian metropolis at the beginning of this year, the chefs have put together a menu. The menu offers a 4, 5 or 6 course experience, suitable for fish lovers and vegetarians alike.

Experience Singapore on your plate in Amsterdam East

The journey started for us with a welcome drink, a champagne tea, with real tea from Singapore. While sipping this refreshing drink, we scan the QR code on the menu and watch a movie about Nomads’ visit to Singapore. A very nice addition, because it gave us a better picture of the dishes that were presented later on the table.

The culinary expedition continued with an amuse-bouche, a pani puri (a deep-fried dough ball) which we were allowed to fill ourselves with a sauce of green mango, lime and Indian mint. An authentic Singapore Sling cocktail accompanies this first dish, giving you a taste of the versatile flavor palettes to come.

The 6 course menu

The ‘real’ six course dinner started with a fish dish called otak otak. Nomads has inspired this dish from a well-known dish from the Singaporean restaurant Rempapa, where they ate themselves. They have made this dish their own by adding Dutch shrimps. We drank a nice Portuguese vinho verde with this.

The second course was dumplings filled with miso, tofu and Jerusalem artichoke, inspired by the dumplings Nomads ate at the Native restaurant in Singapore. With this dish we were served a Nomads Mary, a variation on the well-known Bloody Mary. A daring drink for a dinner, but we really liked it. The third course was a chili crab, prepared with sereh and we were served with a Sauvignon blanc from New Zealand.

And even more goodies..

The fourth course was a dish with pork belly served with a spicy coriander cocktail. The gin used for this was imported by Nomads from Singapore. A curry with shrimps, pumpkin, papaya, chinese cabbage and mango was served as the fifth course. As a matching drink we got a Tanglin Gin coconut cocktail, which became our favorite of the evening.

Special dessert

Funnily enough, the inspiration for the dessert comes from a typical Singaporean breakfast (a very soft-boiled egg that they dip bread in) and a spread that they also eat on bread with palm sugar, among other things, called gula melaka. The chefs at Nomads have transformed this into a sweet cocktail and a delicious combination of sorbet and ice cream with white chocolate and lime. It was the perfect end to the evening.
