Commercial restaurant kitchens with gas-fired appliances can expose employees to pollutant concentrations exceeding health-based benchmarks for nitrogen dioxide, carbon monoxide, and benzene during service hours. In approximately 70% of gas-equipped kitchens sampled, hourly average nitrogen dioxide concentrations outside ventilation hoods exceeded the Environmental Protection Agency’s outdoor standard of 100 parts per billion by volume.

Operational Risks and Indoor Air Quality Metrics

In roughly two-thirds of commercial kitchens operating gas-fired equipment, pollutant concentrations breached health-based benchmarks within active employee work zones. One specific kitchen logged a 15-minute average exceeding 1,000 ppbv, topping the short-term occupational exposure limit established by the National Institute for Occupational Safety and Health for nitrogen dioxide.

Beyond nitrogen dioxide, concentrations of carbon monoxide and benzene surpassed California’s one-hour exposure guidelines in three and five gas-operated kitchens, respectively. Benzene remains classified as a known human carcinogen. Meanwhile, electric kitchens evaluated in the same study maintained pollutant levels below all evaluation thresholds during cooking operations.

Electric alternatives demonstrated consistent performance across the monitored facilities. None of the electric kitchens triggered pollutant warnings or exceeded benchmark ceilings during peak service periods.
