Preparation and cooking time

  1. Take nice, generous potatoes, wash them carefully and cut them into slices and then into thin sticks without having peeled them.
  2. Dip everything in a container filled with hot water.
  3. Leave to stand for a quarter of an hour or even 30 minutes to eliminate all the starch from the potatoes.
  4. Place your sticks on a clean tea towel and wipe well to remove the water
