Keep that name: Pork Loin, because if you are looking for a different, juicy, tasty and versatile meat, know that you have found your culinary wild card! Its softness combined with a flavor that works well with sweet and sour, salty, roasted or even cooked, but the point is always!

What is Pork Loin?

The pork loin is a piece that is removed from the dorsal region of the pig. This specific part is known for its thinness and light marbling, which results in soft and tasty meat, after all the fat is “engrained” in the meat and not on the sides.

Because it has a neutral flavor it also allows it to be combined with many different types of seasonings and sauces. This allows the cook’s creativity to present itself as it works well with “whatever direction the recipe takes”.

I’m always on the run, so with that in mind, I came up with a recipe for New Year parties that it was quick, easy and accessible and that’s why I didn’t think twice after all this revenue it’s wonderful!

The Mango Chutney

O Chutney You can make it up to 30 days in advance but you can’t forget that it has to be kept in the fridge and of course, it goes with any roast! For those who are unfamiliar, chutney, although made with fruit, has a mild, delicious sweet and sour flavor!

Ingredients:
– 1 piece of pork loin seasoned the day before with olive oil, salt, black pepper, crushed garlic and lemon juice.
– 2 tablespoons of olive oil
– ½ chopped or grated onion
– 2 cloves of garlic, chopped or crushed
– 2 cups of mango (chopped into cubes)
– 6 cloves
– 1 teaspoon of spicy paprika
– 1 teaspoon of cinnamon powder
– 50ml of water
– 1 tablespoon of honey
– 1 teaspoon of salt
– black pepper to taste
– 1 tablespoon of white vinegar

My sirloin I made the pork in the pan because I think it’s easier to control the temperature, as well as making it easier to turn when necessary, but you can make it in the oven if you prefer.
