Tristan Brandt in the Sunshine State “Florida”: Carillon Miami Wellness Resort announces culinary partnership – top chef from Mannheim develops new restaurant concept for trendy luxury wellness resort – opening planned for spring 2022.
Top chef Tristan Brandt, managing director of the restaurant 959 & Pino’s Bar in Heidelberg and patron of the “epoca by Tristan Brandt” in the 5-star resort Waldhaus Flims in Switzerland, will open a gourmet restaurant in the luxury wellness resort together with the Carillon Miami Wellness Resort.
Tristan Brandt is regarded nationally and internationally as a culinary visionary who celebrates modern French cuisine with Asian influences as a “work of art on the plate”. The successful, award-winning and well-travelled top chef (formerly Germany’s youngest 2-star chef) will support the culinary operation of the restaurant concept in Miami Beach with his expertise.

And with the Guide Michelin planning the first Michelin guide in the Sunshine State together with Visit Florida, the timing for the partnership between us and Tristan Brandt could not be better,” says Patrick Fernandes.
“After an international career that has taken me across Europe, to Asia and across the Atlantic, I am excited about the opportunity to offer guests at the Carillon Miami Wellness Resort a new culinary concept tailored to my taste,” says top chef Tristan Brandt on his first experiences in the USA. “Miami Beach is such a vibrant market with a range of excellent restaurants and now the Michelin Guide comes knocking to recognize the best. With an abundance of locally sourced ingredients from Land & Meer and an enthusiastic clientele, I can’t wait to get started and take the Carillon culinary experience to the very top.”
However, Tristan Brandt will not turn his back on Germany, quite the opposite: “I am constantly on culinary journeys and continue to develop myself, from which all projects and concepts for which I work benefit equally. I support young talents, which I use in the respective gastronomy and promote them there in a targeted manner. This means I can look after several projects at the same time without having to be on site all the time. I gain national and international expertise and get to know different cultures and target groups. All experience that I can use in my concepts,” explains Tristan Brandt, who is already really looking forward to the new challenge in Miami.
