What the researchers discovered

Average post-meal blood sugar levels were “significantly” lower in the kale group than in the placebo group.

“Our findings suggest that eating cabbage inhibits postprandial increases in plasma glucose levels with a single dose of 7 g, and that a dose of up to 14 g is safe,” the authors concluded.

What explains this effect?

Although the researchers haven’t suggested an explanation, kale is low in calories and carbohydrates.

This is important for two reasons. First, calories increase weight gain, which can hinder insulin production.
